I've seen just a handful. After watching Claymore though I quit. I didn't want it to end so prematurely, there isn't even a season 2. It just ends. I really enjoyed the anime, you guys probably would too, no idea how to describe it. It's a shortish 26 episodes with each one being about 20 minutes long. I think my depression about this anime ending is gone, so I'll probably watch something else as I just finished The Walking Dead.
I've also seen Yu-Yu Hakusho which was also amazing and probably my first ever anime, along with Sailor Moon but I never watched it all. Soul Eater is good but ends with a clear continuation that never happened. Digimon Season 1-3, 3 is slightly acceptable but beyond that it's horrid. High School of The Dead was also good, it could've had a decent story buy they focused on the Ecchiness of it.
Edit: Lol, completely drifted away from the main topic. Claymore had really good opening and ending theme songs in my opinion. I even downloaded the ending theme and listened to it a bunch of times, and I have absolutely no idea what the song says lol.
